How this is calculated
Your monthly Shopify bill is a subscription plus what Shopify takes on every sale. The subscription is fixed. The processing is a percentage of revenue plus a flat fee on each order, which is why average order value changes the answer as much as revenue does.
Orders are derived as revenue divided by AOV. The flat per-order fee is the same on every plan, so a store doing the same revenue in more, smaller orders pays more in fees on any plan. That is the part a headline "2.9%" never shows.

Where the plan thresholds come from
A higher plan costs more in subscription and less in processing, so there is a revenue at which the trade flips. The flat per-order fee is identical on every plan, so it cancels out of that comparison entirely, which is why the thresholds depend only on revenue and not on AOV:

What cost cannot tell you
Above roughly /mo the cheapest plan and the right plan stop being the same question. Advanced caps admin access at 15 people and cannot customise checkout at all; below Plus, every additional storefront is a second full subscription with its own inventory. Those limits decide the plan long before the processing gap does, which is why the setup fields above can override the cost ranking.
About the Shopify Plus figures
The /mo figure is the published three-year commitment floor; a one-year term is listed at /mo, and Shopify moves higher-volume businesses onto a variable platform fee it does not publish. A Plus contract includes 10 storefronts, then $/mo for each one beyond that. Treat any Plus total here as a floor, not a quote.
